Ingredients
1 cup quinoa
1 cup brown rice
1 cup green lentils
1 cup chickpeas
1/2 cup nutritional yeast
1/4 cup ground flaxseed
1 tablespoon dried parsley
1 tablespoon dried basil
1 tablespoon dried thyme
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon sea salt
To make this vegan kibble, simply cook the grains and legumes in a pot of water, spread them out on a baking sheet, and bake until slightly crispy. Then, toss them with the seasoning mixture, let them cool, and store them in an airtight container for a convenient and tasty snack.
Instructions
Preheat your oven to 375°F (190°C).
Rinse the quinoa, brown rice, lentils, and chickpeas thoroughly. Add them to a large pot and cover with water. Bring to a boil over high heat, then reduce the heat to low and simmer for about 20-25 minutes or until the grains and legumes are cooked but still slightly firm.
Drain the cooked grains and legumes and spread them out in a single layer on a large baking sheet. Bake in the preheated oven for about 10-15 minutes or until slightly crispy.
Meanwhile, in a small bowl, mix together the nutritional yeast, ground flaxseed, dried parsley, dried basil, dried thyme, garlic powder, onion powder, smoked paprika, and sea salt.
When the grains and legumes are done, transfer them to a large bowl and sprinkle the seasoning mixture over them. Toss everything together until the grains and legumes are coated in the seasoning.
Let the kibble cool completely before transferring it to an airtight container.
